What is in our yufka?
Our yufka consists of three ingredients:
- Wheat flour
- Water
- Salt
No egg. No milk. No butter. No preservatives. No colourings. Nothing that does not belong.
This sober composition makes our yufka suitable for:
- Vegan consumers
- People with an egg or dairy allergy
- Halal-keeping families
- Anyone who prefers to eat clean
Why vegan?
Many commercial yufka contain egg or milk powder. That keeps the dough supple for longer and adds volume. But it does not make the product better; it just makes it less suitable for anyone who does not eat animal products.
We chose a vegan recipe from the start. That makes our yufka suitable for the Dutch V-label and for anyone eating plant-based.
Why halal?
Our ingredients are plant-based. There is no meat or animal fat in our production. Our yufka is therefore suitable for Muslim families and for hospitality businesses that work halal.
Why daily fresh, with no preservatives?
Yufka that has to sit on a shelf for months needs preservatives. Substances such as E202 (potassium sorbate) keep the dough good for longer, but they change the flavour and the structure.
We make a different choice:
- We bake fresh yufka every working day
- We deliver within a few days of production
- We advise our customers to freeze the yufka if they want to use it later
The result is yufka that tastes the way yufka is meant to taste. Light, supple and with no aftertaste of preservatives.
Our production process
Our factory is in Ermelo, on the Veluwe. We produce up to 100,000 yufka per day. We combine machinery with hand checks: machines do the heavy work, people check that every yufka meets our standard.
Step by step:
- Mixing the dough, flour, water and salt in fixed ratios
- Resting, the dough is given time to develop evenly
- Rolling out to the right thickness for each variant
- Baking on a hot plate, briefly enough to stay supple
- Cooling straight after baking, to lock in freshness
- Packing, airtight and ready for transport

Is the yufka halal-certified?

How long does the yufka keep?
Refrigerated, the yufka stays good until the date on the packaging. For longer storage, freeze it straight away. Thaw at room temperature in about 30 minutes.
What is the difference between your three variants?
Köy yufka is the classic village variant, thin and supple. Böreklik is a touch sturdier and made for börek. Dürüm lavaş is the larger, supple wrap for dürüm and kebab.
